Fats can be classify into two groups; unsaturated and saturated fats. Saturated fats, generally have a higher melting point, can be found in diary and red meat. Unsaturated fats, consisting of double bonds, have a lower melting point. To break down fats, bile is needed.Fats can only be digested in small intestine, where they meet bile. Bile breaks the large fat droplets into smaller droplets which is easier for pancreatic lipase to digest.
