Fermentation of Soy Sauce (VERY COOL VIDEO FOR CLASS TO WATCH)

A very interesting feature film by Nat Geo that looks into the traditional process of making soy sauce. Tying it to today’s class and presentation (24th sept, week 7), we can clearly see the step by step fermentation process of soy sauce, which required constant stirring, close attention to the fire and the multi-layered distillation sequences. This is similar to what we learnt from reading Huang’s illustration of ancient fermentation techniques. Coupled with impeccable cinematography, this video is A MUST-WATCH 🙂 Enjoy the video and have a good recess week y’all, cheers!
